Hi!!

Have just moved house and all my cookbooks are in storage.

Am hoping that someone has the Mindfood Christmas Cookbook from last year (2008) handy. Need the recipe for the Berry trifle made with mascarpone. I made it last year and we all loved it!

Anyone??

too late now I guess and I hadn't discovered Mindfood at that stage but there was a fantastic Berry Trifle with Creme Fraiche in the December Gourmet Traveller.

All Christmas recipes are available on the MiNDFOOD website.

Are you referring to the Gingerbread, Mango, Peach and Blueberry Trifle?

Otherwise you might be interested in the Berry Vacherin from 2009, or even the Crushed Berries in Marscarpone from the Christmas Brunch recipes.
